Homemade bacon is often easier than many people would think. Cooking bacon over a hot fire will bring out the flavor. However, if you want something more subtle you can try baking it. It's not nearly as easy to do as using a grill, but you can still get good results. A simple method that worked well for me was to mix in a bit of apple cider vinegar, some baking soda, ground cinnamon, and a teaspoon of sugar into a cup of water.
Mix the mixture together until it's fairly stiff, pour this into a bowl and then pour it over the coals. Place this in a small sealed jar and place the lid on top of it. Leave the mixture in the fridge overnight so that the flavors can blend well.
